For example, this week he's in Ohn'ahran Plains, next week he'll probably be in Thaldraszus, so is it possible to change the waypoints according to the zone concerning the NPC Celestine of the Harvest ?

Interesting idea, I don't think we have any existing tech for this sort of tracking so it would require research and testing to see how it could be implemented. If the NPC doesn't currently list at least all possible coordinates that is something we could easily add at least.
