I replaced the default castbar with the one provided by Cell Unitframes and I am really enjoying the look alot. However, the bar will not show for certain player actions. So far I have noticed this with a every casted/channeled quest item and while crafting, which feels very weird. Would it be possible for Cell Unitframes to also display its castbar for actions/casts of these types?

This would probably best be achieved with a tick box for people to opt in or out of this feature to either limit the castbar to regular spell casts or make it display every action like the default blizzard castbar.
