This is my current ElvUI profile for Dragonflight (tested both on Live and Beta). I took a few parts I liked from some other UIs and tweaked them to make something that I liked. You should be able to change some parts out for other addons if you prefer (e.g. Grid2 or Plater).
I currently use Afenar's WeakAura pack with a Y offset of -173.
