Would it be possible for ore_dict to be added for the different variants of sieves

I'll do that next update. If you want to do it in the meantime, you can make a tag yourself and add all of the sieves to it.

I'm fairly new to modpack development would you be able to a good resource on how to create an ore directory?

Here's the wiki article. They aren't called ore dictionaries anymore (not since 1.12), they're called tags. Make an item tag with all of the sieves.

Thank you I'm adding the tag now luckily I just did the crafting recipes for the biomes o' plenty sieves so I'll have it a little quicker.

Are the BoP sieves not craftable by default?

You're right, the recipes aren't added. I'll fix that

I added the recipes in Ex Deorum 1.6, no need to add them yourself. I forgot to add the sieve tag though, that'll come later.
